Stuffed Maple Acorn Squash

This recipe great if you are looking for a sweet and savory dish that fills you up and yet is still vegan and healthy for you.
This recipes is for one person, if you are making this for more than just yourself then just adjust accordingly.
Ingredients
1 Acorn Squash
1 Cup of Cooked white rice
Handful of Walnuts
1 Stalk of Celery
1 Carrot (medium)
3 Tbsp of Onions (chopped into small pieces)
2 Tbsp of Maple Syrup
1/2 Tsp Garlic Powder
1/2 Tsp of Sage (ground)
1/2 Tsp of Nutmeg
1 Tsp of Poultry Seasoning
Instructions
If you don't already have rice made, then make some white rice. I made my steamed rice in my crockpot.
White the rice is cooking, cut your Acorn Squash in half and poke holes on the Acorn (about 6 holes). Then rub some Maple syrup on the Acorn Squash (not on the out side BUT you can).
Preheat your Oven to 375 and put your Acorn facing down on a cooking sheet for about 35-45 minutes (depends on how big yours are).
While the Acorn Squash is cooking, cut the celery, onions and carrots into small pieces and put them in a pan with a little bit of water and toss them around together until they soften a bit then put in the white rice in the pan.
Once then rice is in the pan with the other ingredients add the Garlic Powder, Sage, Nutmeg, Poultry Seasoning and the Salt and Pepper to your liking.
Mix everything together for about 2 minutes, just so that everything is mixed well together.
Once it's ready put the rice mixture into the Acorn Squash.
Then top it with the Walnuts and Maple Syrup.
